Havana Lime Mint Loaf Tea Cake Recipe

Are we all Havana good time? Who says mojitos are just for cocktails - enjoy this Havana sprinkled lime mint loaf tea cake recipe topped with candied lime zest.

If you are a citrus lover, this dessert is for you. Sweet, tangy, and fluffy, it has so many different textures and flavours to tickle your senses. And the best part is you can use the lime zest and the lime juice. When life gives you limes, squeeze the most out of them!

A little history on Salty, we actually went from bar to bar asking for the lime peels from bartenders that peeled limes before they juiced them for cocktails. Amanda would take the subway home with Tupperware of lime zest to dehydrate for the salts.

Amanda has always been a big advocate of making the most out of our food to reduce waste, and why not save up some of that Havana sugar rim for a little dessert.

  • 3 large eggs
  • 1 cup granulated sugar
  • 2 tsp Mint Extract
  • 2 tbsp Havana flavoured sugar
  • 1 cup Greek Yogurt
  • ½ cup Canola Oil
  • 3 tbsp Lime Zest
  • 2 tbsp Lime Juice
  • 1 ¾ cup All Purpose Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt (optional)

Lime mint glaze:

  • 1 cup Confectioners’ sugar
  • 3 tbsp Lime Juice
  • ¼ tsp Mint Extract

  1. Preheat oven to 350 F. Butter a 9x5inch loaf and flour, set aside.
  2. In a Stand up Mixer at medium speed, combine Eggs, Sugars and Greek yogurt and whisk vigorously until combined.
  3. Drizzle oil while whisking.
  4. Add Lime Zest, Juice, Mint Extract to your mixer until combined. 
  5. In a separate bowl, combine Flour, baking powder and optional salt. Whisk until combined. Lower speed and add the dry ingredients 1/3 at a time. Pause the machine to clean up the sides. Don’t over mix!
  6. Gently pour cake batter into the prepared pan. Bake for approximately 50 minutes.
  7. Allow loaf to cool in pan on top of the wire rack for 10 minutes before removing from the pan. 

Lime mint glaze:

  1. Grab a small bowl with your sugar and slowly add in your lime and mint extract
  2. Stir well until it reaches the right consistency
  3. Add each tbsp of lime juice one by one
  4. Add candied lime peels (recipe here)
  5. Drizzle Havana sugar on top 
  6. Serve and enjoy!
