A super chilled Gin Gimlet is one of my ultimate favourite cocktails to sip on, especially during a hot summer day.
Here's a fun twist on this classic. I'm calling this cocktail the BRICK LANE because I am seriously feeling itchy to travel. I lived in London, England from 2012-2014 and this was the street I lived on. Every Sunday they would block off the road for a market with so many interesting local shops to discover.
Rather than the typical simple syrup, this recipe calls for an apple pear ginger syrup. I put equal parts pear nectar and sugar in a pot over medium heat and added in one chopped apple and some sliced fresh ginger to create this.
If you're more of an apple fan, try the same syrup recipe using apple juice as the base and throw in a sliced pear. As I always say, a cocktail is only a great cocktail if you like it. Choose your own adventure!

- 1.5 oz Tanqueray London Dry Gin
- .75 oz apple pear ginger syrup
- .75 oz lime juice
- 2 dashes grapefruit bitters
- 1 tbsp Havana cocktail rimmer
- Rim glass with Havana cocktail rimmer
- Add all ingredients in a cocktail shaker with ice and shake for 30 seconds
- Strain mixture into rimmed glass
- Garnish with lime peel
